This hearty smoked ham, potato and corn soup is a wonderful choice for those seeking a dairy-free meal that doesn't compromise on depth of flavour. By using a combination of smoked ham hock and diced ham steak, the broth develops a rich, savoury profile that perfectly complements the natural sweetness of the corn kernels and vibrant bell peppers. The addition of potatoes ensures a thick and satisfying texture, making it a complete and comforting bowlful for a chilly evening.
A brilliant option for batch cooking, this soup actually improves if made a day in advance, allowing the smoky notes to infuse through the vegetables. It is naturally gluten-free and dairy-free, providing a healthy yet indulgent-tasting lunch or light dinner. Serve it simply on its own or with a slice of crusty bread to soak up the delicious, golden broth.
