Ingredients for Tomato-watermelon salad with turmeric oil

  • 60 ml virgin coconut oil

  • 5 ml coarsely crushed peppercorns

  • 5 ml coarsely crushed coriander seeds

  • 2.5 ml cumin seeds

  • 2.5 ml ground turmeric

  • 450 g seedless watermelon, rind removed, flesh cut into 1.25 cm pieces

  • 2 medium or 1 large heirloom tomato, cut into 1.25 cm pieces

  • 225 g mild French feta, cut into 1.25 cm pieces

  • flaky sea salt

How to make Tomato-watermelon salad with turmeric oil

  1. Heat coconut oil in a small saucepan over medium heat.Add the peppercorns, coriander seeds, cumin seeds, and turmeric. Cook for about 3 minutes until fragrant.

  2. Remove the saucepan from the heat and allow the turmeric oil to cool slightly.

  3. Arrange the watermelon, tomato, and feta on a serving platter.

  4. Drizzle the turmeric oil evenly over the arranged ingredients and sprinkle with salt.
