Ingredients for Halloumi puff pastry twists

  • 425 g ready-rolled puff pastry sheets (2 sheets)

  • flour, for dusting

  • 125 g grated halloumi

  • 100 g grated pecorino or parmesan

  • a small bunch chives, snipped

  • 1 medium free-range egg, beaten

  • sea salt, freshly ground black pepper

How to make Halloumi puff pastry twists

  1. Preheat the oven to 200°C (180°C fan) / gas mark 6.

  2. Line two baking trays with baking parchment.

  3. Unroll one of the pastry sheets onto a lightly floured surface. Scatter nearly half of the grated cheese over it, then sprinkle with chives and season with a pinch of salt and pepper.

  4. Fold the pastry in half to cover the cheese filling, then roll it out to its original size. Cut into strips 1 cm wide and brush lightly with beaten egg. Twist each strip three or four times.

  5. Repeat the process with the remaining sheet of pastry.

  6. Arrange the pastry twists on the prepared baking trays and sprinkle with the remaining cheese. Bake in the preheated oven for about 12 minutes, or until puffed up and golden brown.

  7. Leave to cool completely before serving. Store any leftovers in an airtight container for up to 48 hours.
