Ingredients for Za'atar spice blend
120 g picked fresh za’atar or oregano leaves (or 45 g dried oregano)
45 g dried marjoram
45 g toasted sesame seeds
12 g dried thyme
15 g ground sumac
5 g fine sea salt
How to make Za'atar spice blend
Arrange fresh za'atar or oregano on a towel-lined plate.
Microwave in 15-second intervals, stirring between each interval, until the herbs are dry and crumbly, about 2–2.5 minutes.
Crumble the leaves by hand or use a spice grinder until they are almost fine, resembling dried herbs.
Combine the crumbled herbs in a medium bowl with the marjoram, sesame seeds, thyme, sumac, and salt.
Store the mixture in an airtight container for up to 3 months.
