Ingredients for Soba noodles with crispy kale
1 medium bunch curly kale, ribs and stems removed, leaves coarsely chopped (about 120 g)
150 g unsweetened coconut flakes
40 g nutritional yeast
2.5 ml kosher salt, plus more
90 ml extra-virgin olive oil, divided
225 g dried soba noodles
45 g tahini
40 ml soy sauce, divided
15 ml honey
10 ml toasted sesame oil, plus more for drizzling
2.5 ml crushed red pepper flakes, plus more for serving
1 lime
How to make Soba noodles with crispy kale
Position the oven racks in the upper and lower thirds of the oven and preheat to 190°C (fan oven 180°C).
In a large bowl, toss the kale, coconut, nutritional yeast, ½ tsp salt, and 2 tbsp olive oil until well coated.
Divide the mixture evenly between two rimmed baking trays and roast for 15–20 minutes, tossing and rotating the trays halfway through, until the kale is crisp and the coconut is golden brown.
While the kale is roasting, bring a large pot of salted water to the boil and cook the noodles according to the package instructions.
Drain the noodles and rinse them under cold running water. Shake off any excess water and place the noodles in a clean, large bowl.
In a small bowl, combine the tahini, soy sauce, honey, 2 tsp sesame oil, ½ tsp red pepper flakes, and the remaining 120 ml olive oil.
Finely grate the zest from the lime directly into the bowl, then halve the lime and squeeze in the juice (about 30 ml). Whisk the dressing until smooth.
Pour about half of the dressing over the noodles and toss to coat evenly.
Add half of the roasted kale mixture to the noodles and toss to combine. Drizzle in more dressing as needed, tossing until the noodles are creamy; season with salt to taste.
Pile the remaining kale on top, drizzle with additional sesame oil, and sprinkle with more red pepper flakes before serving.
