Ingredients for Everyday greens salad
360 ml extra-virgin olive oil
180 ml red wine vinegar, white wine vinegar, and/or apple cider vinegar
15 ml Dijon mustard
15 ml honey

225 g mixed tender greens
120 g torn tender herbs (optional)

How to make Everyday greens salad
Combine the oil, vinegars, mustard, and honey in a large, resealable jar or airtight container. Cover and shake vigorously until emulsified, about 30 seconds. Season with salt.
Do Ahead: Prepare the vinaigrette up to 1 month in advance. Cover and chill in the fridge. Shake well to re-emulsify before using.
Drizzle 45 ml (3 tablespoons) of the vinaigrette into a large bowl, ensuring to coat the sides and bottom.
Add the greens and herbs (if using) to the bowl. Using your hands, gently fold the greens, working from the bottom and up the sides of the bowl, until they are evenly coated in the vinaigrette.
Season with salt until the greens taste vibrant, tossing a few times if necessary to ensure even seasoning.
Mound the salad higher than wide on plates or in shallow bowls for serving.
