Ingredients for Cold soba noodles with miso and smoked tofu
15 ml finely grated peeled ginger
45 ml miso paste
45 ml mirin, plus more to taste
45 ml unseasoned rice vinegar, plus more to taste
15 ml soy sauce, plus more to taste
1 g kosher salt, plus more to taste
450 g soba noodles
5 red radishes, thinly sliced
5 spring onions, trimmed, thinly sliced
113 g smoked tofu, cubed
How to make Cold soba noodles with miso and smoked tofu
Whisk together the ginger, miso paste, 45 ml mirin, 45 ml vinegar, 15 ml soy sauce, and 1/4 tsp salt in a large bowl.
Cook the soba noodles according to the package instructions. Drain the noodles and rinse them under cold water, then add them to the ginger mixture.
Season the noodles with additional mirin, vinegar, soy sauce, and salt, if needed.
Transfer the noodles to a serving bowl or platter and top with radishes, scallions, and tofu. Serve immediately.
