Ingredients for Citrusy haricots verts
900 g haricots verts, trimmed
5 ml grated lemon zest
5 ml grated orange zest
15 ml extra-virgin olive oil
5 ml fresh lemon juice
5 ml fresh orange juice
How to make Citrusy haricots verts
Bring a large pot of salted water to a boil.
Add the haricots verts and cook for 4–6 minutes until crisp-tender.
Drain the haricots verts and set aside.
Heat a splash of oil in a large frying pan over medium-low heat.
Add the citrus zests, ½ tsp salt, and ¼ tsp pepper to the frying pan. Cook for about 3 minutes until fragrant.
Add the drained haricots verts to the frying pan and toss to heat through.
Pour in the lemon and orange juices, tossing to coat the haricots verts evenly.
Note: The haricots verts can be prepared without the zests, oil, and juices up to 1 day in advance and chilled.
