Ingredients for Spicy chicken lettuce wraps
30 ml soy sauce
15 g dark brown sugar
5 ml fish sauce
15 ml sambal oelek or Sriracha, plus more for serving
30 ml vegetable oil
3 spring onions, white and pale green parts only, thinly sliced
2 garlic cloves, finely chopped
450 g minced chicken
kosher salt (to taste)
bibb lettuce leaves
lime wedges
tender herbs (for serving)
How to make Spicy chicken lettuce wraps
Mix the soy sauce, sambal oelek, brown sugar, and fish sauce in a small bowl. Set aside.
Heat oil in a frying pan over medium heat. Add the scallions and garlic, and cook, stirring occasionally, until softened and lightly coloured, about 3 minutes.
Add the minced chicken and lightly season with salt. Cook, breaking it up with a wooden spoon and tossing occasionally, until the chicken is cooked through, 5–7 minutes.
Add the reserved soy sauce mixture to the pan and cook, tossing occasionally, until the liquid is almost completely reduced, about 2 minutes.
Serve the chicken mixture with lettuce, fresh herbs, lime wedges, and extra sambal oelek for making lettuce wraps.
