15 g light brown sugar
15 g sea salt
15 g onion powder
10 g dried oregano
10 g fennel seeds
5 g smoked paprika
5 g ground coriander
1 g ground cardamom
900 g boneless pork loin
a sous vide machine, a 3.8-litre vacuum-sealable or resealable plastic bag
How to make You’re the best cold cut around.
Clip or stand the sous vide machine to a tall, large pot. Fill the pot with warm water to the height recommended by the manufacturer, keeping in mind that the water level will rise when the pork is added.
In a small bowl, mix together the brown sugar, salt, onion powder, oregano, fennel, paprika, coriander, and cardamom until well combined. Rub this mixture all over the pork.
Place the seasoned pork into a bag, along with any leftover spices from the bowl.
Vacuum-seal the bag or partially close a resealable bag, ensuring to remove as much air as possible to prevent the bag from floating. If using a resealable bag, submerge it in the water until only the open edge is exposed, then seal it to push out more air.
