Ingredients for Avocado peanut butter brownies

  • 2 avocados

  • 2 eggs, lightly whisked

  • 30 ml coconut oil, melted

  • 120 ml maple syrup

  • 5 ml vanilla extract

  • 30 g vanilla Tone It Up protein

  • 60 g oat flour or almond flour

  • 30 g unsweetened cocoa powder

  • 2 g baking powder

  • 1 g sea salt

  • 30 g peanut butter

  • coconut oil spray (optional)

How to make Avocado peanut butter brownies

  1. Preheat the oven to 180°C (fan 160°C).

  2. In a bowl, combine the wet ingredients, excluding the peanut butter.

  3. In a separate bowl, mix the dry ingredients together.

  4. Combine the wet ingredients with the dry ingredients, stirring until well mixed.

  5. Pour the mixture into a baking tray that has been lightly greased with coconut oil.

  6. Add dollops of peanut butter evenly across the surface of the mixture. Use a knife to swirl the peanut butter through the mixture, creating a marbled effect.

  7. Bake for 30–35 minutes, or until a skewer inserted into the centre comes out clean.
