Ingredients for Apples, potatoes, and bacon

  • 450 g potatoes, peeled, chopped

  • 6 juniper berries

  • 2 large apples, cored, chopped

  • 30 g butter, softened

  • 30 ml olive oil

  • 6 rashers smoked back bacon

  • A small handful parsley, chopped

  • 150 ml crème fraîche

  • 5–10 ml grain mustard

How to make Apples, potatoes, and bacon

  1. Fill a large saucepan with water and bring it to the boil.

  2. Scrub the potatoes and cut them into large pieces. Add the potatoes to the boiling water and cook for 10 minutes, then drain.

  3. Roughly crush the juniper berries and set aside.

  4. Cut the apples into quarters and remove the cores.

  5. In a shallow pan, warm the butter with the olive oil over a low to moderate heat.

  6. Add the crushed juniper berries, apples, and drained potatoes to the pan. Cover the pan partially with a lid and baste occasionally.

  7. As the apples and potatoes begin to soften, add the back bacon to the pan and allow it to cook in the buttery juices.

  8. Season the mixture with salt, coarsely ground black pepper, and half of the chopped parsley.

  9. Once the potatoes are golden and the apples are soft, transfer everything to warm plates.

  10. Discard any excess fat from the pan, but keep the delicious crusty bits.

  11. Spoon in the crème fraîche and mustard, then bring to the boil while stirring constantly.

  12. Pour the sauce over the bacon and apples before serving.
