Ingredients for The only salsa you need
900 g tomatoes, cored, cut in half crosswise
150 g white onion, sliced into 1 cm thick rounds
3 serrano chillies
3 garlic cloves, unpeeled
salt, to taste
30 ml fresh lime juice
30 g finely chopped coriander
tortilla chips, for serving (optional)
How to make The only salsa you need
Preheat the grill.
Line a baking tray with foil and place the tomatoes cut side down on it.
Arrange the onion, chillies, and garlic around the tomatoes, ensuring everything fits snugly but does not overlap.
Grill the vegetables, turning the onion and chillies once, until they are lightly charred — about 6 minutes for the chillies and garlic, and 15–18 minutes for the tomatoes and onion.
Peel the garlic and place it in a food processor along with half of the tomatoes. Pulse until very smooth.
Add the remaining tomatoes and pulse until they are mostly broken up, but the mixture still retains some texture. Transfer the mixture to a medium bowl.
Finely chop the onion and chillies, then mix them into the purée and season with salt. Allow the mixture to cool.
Stir in the lime juice and chopped coriander. Taste the salsa and adjust the seasoning with more salt if needed.
Serve the salsa with tortilla chips.
